I am totally into mocha everything these days! Also totally into summer everything! As in, we got a pool for our baby girl, and she loves it! And I do too! It’s a great way to get some sun!! Also, loving cold iced coffees, and today I grabbed an iced coconut milk mocha macchiato at Starbucks! Wow, that was so yum! Even my daughter thought so!!
So, the mocha craving led to cookies… I found a recipe that I thought looked kinda good, and then made it my own!
The ingredients are so basic! Butter, sucanat, egg, vanilla, flour, ground coffee, baking soda, salt, and chocolate chips! And just in case you didn’t realize, I already dumped the vanilla in with the egg for the photo so that’s why the egg has a brown yoke! 😉
Also, I use sucanat and I find that if I blend it really fine, it mixes into the dough a lot better! So for you natural sugar people out there, try it! It’s a little more like store-bought brown sugar!!
There’s the awesome cookie dough, getting ready to mix in the chocolate chips! I love all the little coffee flecks! And the flavor of coffee and chocolate chip cookies together is just amazing!
Something I often forget to do is put chocolate chips on top of the cookies as opposed to only mixing them in the batter. So that makes them look extra delicious and chocolatey and more professional! I am so not a professional baker, in any sense of the word because I have more flops than good cookies! But it’s fun to try!
So, these are perfect with a glass of cold milk. Or with a cup of hot coffee. Or iced coffee! Or with a coconut milk mocha macchiato from Starbucks! Yum!

Here’s a fun fact… My husband grew up in a family without much milk. His dad is somewhat anti-dairy, especially pasteurized milk. (And by the way, all 12 children are strong and healthy!! And I respect and appreciate my dad-in-law greatly for his beliefs!)
I grew up somewhat enjoying milk! I remember as a little girl running across the train tracks to our neighbors with a glass gallon jar and a loony to get a gallon of milk! My dad had an allergy to pasteurized milk so we always preferred raw, and I still do! And now that I’m married we get raw milk from a farm up the road! (And pay a lot more than a dollar for a gallon of it!)
My husband definitely doesn’t drink it like I do, but that’s perfectly alright! I’m really not out to win him over!
Here we are enjoying our little snack. And she is sure enjoying smashing the cookie into 50 pieces!

HERE’S THE RECIPE!
COFFEE CHOCOLATE COOKIES
1 cup butter
1 cup sucanat or brown sugar
2 tsp vanilla
2 cups flour
1 Tbsp + 1 tsp ground coffee
1 tsp baking soda
1/2 tsp salt
1 cup chocolate chips (and more for on top)
Preheat the oven to 350 degrees.
Beat the butter and brown sugar until it’s fluffy. Then beat in the egg and vanilla until it’s all combined, about 2-3 minutes.
Stir together flour, coffee, baking soda, and salt. Slowly stir it into the sugar-butter mixture.
Last, stir in the chocolate chips.
Scoop them onto greased cookie sheets, or if you have parchment paper, that would work great!
Bake them for 8 or 9 minutes. Mine were perfect at 8.
