Happy First Day of Fall!!! Yay!!!

Just wanted to share with you some incredible food we’ve been eating lately and share a recipe that I found that is AH-maz-ing!!

Last Friday (a week ago!) we had a BBQ birthday party for two of the guys Brian works with! That was super fun and so delicious! We grilled pre-seasoned ribs from Costco, and they were just fall-off-the-bone tender and flavorful! We also grilled shrimp and did wings in the oven! The wings recipe was good, people! Spicy and a bit of an asian flair… I got the recipe from Baker By Nature. Here’s a screenshot of the ingredients though!

We also did fries, guacamole and chips, and Caesar salad, and then Dairy Queen ice cream cake for dessert!! Definitely was a food-filled evening! And great fellowship!! 🙂


Another delicious food I made this week was sourdough!! I started my starter about 3 weeks ago. I fed it once a day for a week and it bubbled up very nicely, so I whipped up a big batch of pancakes for a first-try thing! They turned out delicious so that gave me courage to try bread!

The thing about sourdough is, you have to plan ahead! I mean, you can’t mix up your dough in the morning and have it baked by supper! Unless you get up at 3 AM…? Why not just mix it up the night before, let it rise overnight, and shape your loaves in the morning… Then let your loaves rise for another hour or 3! Bake it and voila! Beautiful chewy sourdough! SOURDOUGH BREAD

The final food I want to share with you today is CHOCOLATE!!! in the form of Fat Bombs! I hadn’t ever made these before, but I am sure glad I did!! Just made my third batch today in about 2 weeks time! Yep, a little bit obsessed! And, I do share them with my husband and baby!! 😉FAT BOMBS

So, so simple! Melt coconut oil and peanut butter together in a bowl. Whisk in cacao powder (not a typo – Cacao powder is raw cocoa, full of antioxidants and lots of other god things! I found mine at Walmart!), honey, a smidgen of salt, and vanilla if you desire. Pour it in a 9×13 pan lined with parchment paper. Stick it in the fridge!

Come back in an hour and it’s nice and ready for you to break apart into bite sized pieces. And enjoy, dear friends! You’re welcome!!

Here’s the recipe:

 

Chocolate Fat Bombs

1/2 cup coconut oil

1/2 cup peanut butter

1/4 cup cacao powder

1/4 cup honey

pinch of salt

1/2 tsp vanilla (opt)

Melt coconut oil and whisk in peanut butter until smooth. Stir in cacao powder, honey, salt and vanilla. Line a 9×13 pan with parchment paper (or spray with cooking spray) and pour the chocolate mixture in the pan. Stick in the fridge or freezer until hard enough to break into pieces. Then break it into pieces and store in the fridge or it’ll get really messy! Eat! Enjoy!
